In the barrel room of the 1796 cellar, beneath the Helderberg, the sommeliers set out the wines of the house: the Cabernet Sauvignon, and the Bastian, the estate’s Bordeaux blend. You taste each one as it is, then, under their eye, you begin to blend. A little more of one, a little less of another, until the glass is yours and no one else’s.
When the blend is settled, it is drawn into a bottle with your name on the order. You take it to the wax. The neck goes into the heat, comes up dark and shining, and is set with the estate seal. A label is written for it — the blend, the date, the name you choose — and the bottle is finished in your hands.
