The idea with Protégé is to keep it casual and comfortable, hitting all the spots with a refined, flavour-packed approach to casual fine-dining. The kitchen team works with local suppliers to keep the menu as fresh and seasonal as possible. Visitors can choose to dine al fresco or watch the chefs at work in the central show kitchen. Resident guests are invited to take their breakfast here or order in-room dining.

The flavour-packed menu is inspired by the team’s culinary expedition to India, as well as memories of travels through Spain, Japan, Mexico, Denmark and the US, as well as chef Charné Simpson’s own Cape Town family influences.
