Abraspungo's Novoandina cuisine, is a culinary style created by gastronomes, to recover food customs of the past, rescuing native ingredients of the area such as quinoa, corn, chochos, beans, and others, which are planted and harvested using ancestral techniques to supply local markets and where Abraspungo's chefs get the inspiration to create special dishes, combining gourmet culinary techniques with local flavors.
