Level one: The first level of Villa Two comprises an inviting central corridor leading to a guest bathroom, study area, and private cinema. There are three luxuriously appointed bedrooms each with an extensive open-plan dressing room, bathroom and separate W/C. The rooms are named Sea Point, Clifton and Bantry Bay, according to their geographical orientation and outlook. Each bedroom extends outdoors onto a private terrace with wonderful views.
Level two: The top floor (street level) includes a glass-walled entrance foyer that opens up into light-filled living, dining and entertainment areas decorated in soft, soothing sea tones with natural stone and unembellished wood finishes. Fold-away, floor-to-ceiling glass doors on two sides seamlessly integrate the indoor and outdoor entertainment areas, infinity pool, and spectacular ocean views. To the right of the entrance foyer is an open-plan kitchen designed for social, interactive cooking equipped with a large central island, sleek timber cupboards, a separate scullery and walk-in cold room. The kitchen may be closed off from the dining area by a sliding panel. A personal chef is on call to create breakfast, lunch, snacks, and dinner. The emphasis is on fresh, locally sourced and seasonal ingredients. Any dietary needs or restrictions, food allergies or children’s meals may be discussed with the chef.

Wine is taken very seriously at Ellerman House, and the hotel’s 9000-strong collection of South African wines represent both established and emerging labels from the Western Cape’s world-renowned wine regions. Many of the wines in the collection are rare or special releases augmented by sought-after vintages bought on auction. Wines from the cellar are only made available on the hotel’s wine list once they have been optimally aged and are deemed ready for enjoyment at peak maturity. Many of these fine wines are also available by the glass without compromising on quality, thanks to the Le Verre de Vin preservation system.
The depth of the wine list allows guests to try verticals of vintages whereby the same wine can be sampled over various releases. Integrating outstanding contemporary architecture with breath taking sculptural elements and cutting-edge design, the Ellerman House Wine Gallery is not only a showcase for this extensive, award-winning wine collection but offers guests a unique, interactive journey into the world of wine. It aims to bring to life South Africa’s 350-year old heritage of winemaking, providing an environment for tasting and learning about local wines as intriguing and inspiring as the wine itself. Sophisticated storage is provided in state-of-the-art wine racks and separate, temperature-controlled maturation cellars for white and red wines.
The gallery incorporates an interactive multi-media wine library and Brandy Tasting Lounge. There is also a Champagne Cellar, stocked exclusively with rare and special vintages of Dom Pérignon.
The Ellerman House art collection takes visitors to this fine hotel on a journey that explores the huge social and cultural shift that South African art has made from the mid-nineteenth century to the present. The art in this collection tells of the character of our land and the expression of our unique South African experience. From the time of the early pictorial historians of the midnineteenth century, such as Thomas Bowler, you acknowledge that this country has a flavour of its own – an essential nature that distinguishes it from other places. Communities in South Africa were extremely physically and culturally isolated from international centres of artistic innovation in the early 20th Century - a time before instantaneous globalisation of today. The Ellerman House collection traces the progress of pioneering work done in the 1930s by a generation of artists, such as Gregoire Boonzaaier, Maggie Laubser and Irma Stern, who were members of The New Group. Progressive identification by artists, such as Walter Battiss and Alexis Preller, with the essential nature of the land and its people - its Africanism, further reinforced the unique qualities of this land. The emergence of black pioneering artist like Gerard Sekoto and George Pemba began a process of cultural integration of the country’s ethnic communities into a unified South African art. In the Ellerman House Contemporary Gallery, an eclectic, outspoken and energetic generation of current artists such as Benon Lutaaya, Heidi Fourie & Blessing Ngobeni are pushing the boundaries of the ordinary in order to create work that explores relevant issues in post-modern South African society. The Collection records the spirit of the times and the development of art and culture in South Africa. Most of the almost 1000 artworks are exhibited as part of the unique artistic experience that guests can enjoy at the Ellerman House.
For the exclusive use of hotel and villa guests, the Ellerman House Spa is a natural extension of the property’s commitment to quality and personalised service. Situated on the ground-floor of Villa One, it is approached through a garden with tranquil water features and lush indigenous plants. A small, highly experienced team of therapists offer a carefully considered menu of beauty and body treatments designed for relaxation, rejuvenation and self-improvement. Everything is designed to soothe the senses while the body and mind are coaxed into balance.
With three single treatment rooms and one double room designed for couples, the spa specialises in cutting-edge massage techniques and anti-ageing beauty rituals drawing on the wisdom and restorative, healing techniques of different cultures from around the world. In addition, there is a sensation shower, sauna and steam room for hydrotherapy.
Specialised massage techniques on offer include traditional Japanese body work, Bellabaci, aromatherapy, lymph drainage, and deep-tissue massage.
Small, well-equipped fitness centre with it’s own sauna and change rooms is located beneath the main house for those who want to maintain a workout regime while travelling. There is also an outdoor, heated lap pool tucked away on a private terrace. Up-to-date apparatus set the scene for an invigorating workout with a view. Equipment includes free weights and a bench, treadmill, stationary bicycle, full-body toning machine, stability balls, weighted medicine balls and exercise mats.
The Ellerman House Library offers guests a collection of fiction and nonfiction titles, plus magazines from around the world. Our guests love to sit and read books in the morning, or enjoy an after-dinner drink by the fireplace. For convenience, a nearby computer and printer are connected to the network and available for complimentary guest use.
The culinary experience at Ellerman House is an expression of our deep love for South Africa. The country’s colourful history and rich cultural heritage provide inspiration for Head Chef Kieran Whyte and his team, who bring our local flavours to life with contemporary flair.
Every plate is a showcase of our passion, bursting with colour and creativity and assembled with extraordinary attention to detail. The use of fresh seasonal produce grown in and around the city is complemented by indigenous ingredients, a splash of imagination and a sprinkle of global influence, which together create the most exceptional fine dining experience in Cape Town.
Head Chef Kieran Whyte and his team delight in putting together all manner of tasty treats and savoury snacks for our 24-hour Guest Pantry. Prepared fresh daily, the shelves are stocked with homemade cakes, cookies and other confections, as well as jars of favourite South African candies. The more restrained among you can enjoy lighter options such as date balls, fresh seasonal fruit and a selection of sugar- and gluten-free baked goods.
Ellerman House Restaurant
Begin the day with a freshly-brewed coffee, one of the world’s finest teas or a refreshing cold-pressed juice while you peruse the à la carte breakfast menu. Served on the sunny terrace with its sweeping views of the ocean, inside the elegant dining area on cooler days or even in your room, the first meal of the day can be as light or indulgent as you wish. Whether you are in the mood for fresh seasonal fruit and homemade granola, a warm, flaky croissant or a flawless Eggs Benedict, our kitchen team are more than up to the task. A range of collectable sculptures, home-ware and furnishings will allow you to recreate ‘the safari dream’ within your own home. Artefacts, as well as authentic carvings and jewellery created by local craftsmen are just a few of the treasures you may find to take home as gifts. Amongst beautiful museum quality, fine-art prints and works by some of the most respected artists on the continent, there are many pieces especially designed for Singita. Here too you can find a range of quality branded Singita safari wear.
We offer a worldwide shipping service so you may make your purchases at the lodges with the option to send them straight home.
As one of South Africa’s most influential buyers of wine, Singita’s cellars are home to some of the most sought-after private reserves and vintage wines the country has to offer. Whether you are a connoisseur or just enjoy the occasional glass of wine, our experienced sommeliers delight in introducing guests to a vast selection of varietals from all over the world.
Through Singita Premier Wine Direct guests may purchase wines from our cellars: either to be taken home at the end of their trip or conveniently delivered to their door. As an addition to cellar purchases, we have secured allocations of highly limited, sought-after wines, including ‘Icons’, ‘Single Vineyard’ and ‘Limited Release’ wines, directly from leading wineries in South Africa. Stored in temperature-controlled cellars, these wines are unlikely to be available anywhere else.
Guests have the opportunity to visit the Sabi Sand Canine Unit for an interactive session where they can participate in an actual tracking exercise with a dog and handler. Guests have the opportunity to meet with a senior handler and go behind-the-scenes at the base camp and see the workings of this dedicated and specialized unit. The dogs are highly trained and able to perform multiple functions, from
pursuing intruders to sniffing out rhino horn and ammunition from vehicles and bags.
Due to the sensitive and costly nature of the program, a donation amount of ZAR5,000 per person has been set. A minimum of 2 and maximum of 6 guests are allowed per demonstration.

We are located in the middle of the Patagonian steppe and the steppe is a unique region with great biodiversity. This allows guests to feel the immensity of Patagonia.
We consider that we are not only a hotel, we are a destination.
About skies, I have to tell you about our skies, sunrises and sunsets are beautiful.
Wine cellar: This is one of the new additions to EOLO, a wine cellar where our sommelier organizes wine tastings and we all get to learn about argentine wines.
Mate tasting. For the more adventurers we always have mate available and we arrange mate tastings. Mate is very traditional in Argentina; it is our version of tea.
EOLO
The hotel's gastronomy brings together the best of the two worlds that compose EOLO.
Our chef - Juan Pablo Bonaveri - who has been in charge of the restaurant for the past five years - uses and optimizes regional products while, at the same time, applying international cuisine techniques and aesthetics. The result has his personal signature, one which values our origins and heritage without losing the cosmopolitan touch. This balance is present in every one of the dishes that we offer our guests.
