At Gmunden Lodge, guests experience an unparalleled fine dining experience. Chef Etienne Coertzen emphasizes creative, seasonal cuisine and regional produce. Coertzen and his team receive daily deliveries of fresh, high-quality organic products from the farm: fruits, vegetables, eggs, dairy, beef, game meat, honey, and more. These ingredients are skillfully crafted into creative dishes such as Baked Meringue with citrus fruits on yogurt clouds or a Butternut Squash Velouté with browned butter, pine nuts, and sage, served with homemade puff pastry bread.
Upon request, lodge guests can enjoy a unique "fine dining experience": lunch or dinner in the wilderness. The Gmunden team sets up tables at stunning hidden spots or transports guests for a sundowner on the highest mountain in the area, where the Lodge's team arranges a fully-equipped bar and snacks. All of this is served on the beautiful dinnerware from the Gmunden Ceramics' African Collection.
The cornerstone of the Gmunden vision "Back to Nature" is the Gmunden Farm, an innovative farm concept centered on sustainable agriculture principles. Following the ethos of "From Producer to Consumer," only what is necessary is taken from the land, with seasonal ingredients harvested on-site. This approach actively reduces environmental impact and minimizes waste through land and farm management.
The goal of this concept is to secure the long-term ecological balance and sustainability of the location. Apart from supplying the Lodge's kitchen, the farm also provides for team members and their families living in the community. Farm operations require many helping hands, thereby creating jobs and investing in staff development.
Discovering the Farm
Lodge guests are invited to visit the farm. They can take a stroll past horses waiting for a ride across the vast plains, wander through orchards, vegetable, and herb gardens, and encounter other animals like pigs, cattle, and chickens freely roaming in spacious enclosures and expansive pastures.
