A trip to the Cape Winelands begins with a stop at the beautiful Simonsig Wine Estate. There you will have a behind- the-scenes tour of a working wine farm, to experience first-hand the process involved in
producing the ‘champagne of South Africa’ - known as Cap Classique, or CC. As the first estate to bottle CC in South Africa, and the suppliers of One&Only Cape Town’s very own CC, Simonsig Wine Estate makes for a superb day out, picking grapes,
experimenting in viniculture and enjoying a leisurely lunch at the estate restaurant, Cuvee. Practice yoga atop one of the most iconic landmarks, the ancient and majestic Table Mountain, an experience never to be repeated. Get up close and personal with these much-loved creatures of the sea during this behind the- cenes experience in partnership with the Two Oceans Aquarium Education Foundation. Neighbours to One&Only Cape Town, the Foundation actively rescues, rehabilitates and releases stranded and distressed sea turtles as part of their conservation mission. Through them hundreds of sea turtles have been saved, cared for and released back into the wild. In this private excursion, guests will be able to participate and assist with turtle care tasks such as feeding, cleaning and enrichment exercises. Following this, guests are free to explore the Two Oceans Aquarium’s attractions such as the touch pool, shark exhibit, kelp forest and penguin exhibit at leisure. This is a fun, interactive and educational experience, perfect for children and adults alike. All proceeds go towards the non-profit Aquarium Foundation’s Turtle Rescue Programme.

A South African grillroom, ROOI offers a menu sourced from both land and sea, transformed by fire, with a touch of local South African flavours and traditions.
ROOI is the Afrikaans word for ‘red’ (one of the twelve official languages of South Africa) and is a colour traditionally associated with power, vitality, life and fire. The theme of fire is prevalent throughout the space, even in the chosen floral motif, a pincushion protea. Proteas are known as the phoenix of the floral kingdom, due to their reliance on fire to stimulate regrowth and like the Protea, ROOI too harnesses the transformative power of fire.

Our executive chef will take guests down to Voëlklip Beach and show them how to safely pick these delicious marine treats. Not only that, but he'll show you how to prepare the mussels with a little garlic, cream and white wine so that you can savour the fruits of your labour with a lovely glass of locally produced Sauvignon Blanc.
The Hemel-en-Aarde is one of South Africa's premier, cool-climate wine producing regions and is home to some of the country's finest and oldest estates including Hamilton Russel and Bouchard Finlayson as well as some of the more modern estates such as Creation. Not only are the wines superb, but the landscape is spectacular. Enjoy a guided tour with a knowledgeable expert, or enliven the experience by doing it on horseback or even on quad bikes.
Sea kayaking is a wonderful outdoor pursuit for the more adventurous. It will get you up close to some of Hermanus's fascinating sea life and it's also great exercise. Paddle along the coastline all the way from the Old Harbour in town to the New Harbour under the careful supervision of the local seals.
Hermanus is surrounded on all sides by natural wonder. As well as the marine fascinations, there are two incredible nature reserves in close proximity - Fernkloof Nature Reserve and Walker Bay Nature Reserve. For botanists, Fernkloof is certainly one of the most rewarding destinations in the Cape Floral Kingdom to explore the diverse fynbos.
Walker Bay is a coastal nature reserve that lies just east of Hermanus. The reserve includes five coastal areas between Hermanus and Die Dam near Struisbaai. The area is also historically significant, with records of Middle Stone Age people (65 000 to 85 000 years ago) living in Klipgat Cave.

Fish Eagle Residence (two bedrooms)
This is your private safari residence retreat in the African bush. With a completely private entrance, including game drive departure and arrival points, you set the pace for exploring the Sabi Sand.
Choose how you spend your stay, whether it’s hours on a game drive (or walking safari) or taking time out to watch wildlife from the deck or the 10m long lap pool. You overlook the perennial Sabie River which attracts an abundance of animals. Lion Sands Ivory Lodge and the pristine environment that is her backdrop are the canvas for renowned and upcoming artists who have been invited to the Artist Residency. The artists draw inspiration from their location and wildlife sightings to create new pieces. Game drives, in open safari vehicles, head out at sunrise and again in the late afternoon. The reserve’s natural animal populations include all of the Big Five, and it is renowned for the quality of its leopard sightings – the most elusive of predators. With no more than 16 vehicles allowed on the reserve at any one time, Lions Sands assures you a truly personal safari, and the field guides are able to take you within close range of Africa’s most impressive species. Photo opportunities are spectacular! Also included is a hot beverage/sundowner stop to purely appreciate being in the bush and in the moment.
For those who wish to experience the bush, not just observe it, there is no better guided excursion. Feel the scrub crunch beneath your feet, touch a velvety acacia seed pod, hear the crack of a branch indicating you are not alone, and spot the game appear just metres off – exhilarating! This is also a wonderful opportunity to encounter the smaller creatures, often missed on safari vehicles, and to discover more about the reserve’s plants – many with fascinating medicinal properties and traditional uses.
Lion Sands together with MORE Community Foundation assists our local Huntington and Justicia B villages, and you can get involved, too. Take a community tour (proceeds go to our development projects here), or roll up your sleeves with our Get Your Hands Dirty initiatives. These centre on education, infrastructure, health and environment, and you can choose the area best suited to your interest.
Between safaris you’ll have the luxury of free time and how better to indulge than in the spa? We favour Africology products, instilled with the belief that self-care brings balance. So with our range of therapies, we offer a wellness experience to rejuvenate your body, quiet your mind, and revitalise your spirit. If you must gym, there’s a fully kitted out facility with a view of the bush to take your mind off the burn.
Dining at Ivory is an exploration, with a table laid out wherever you wish, and dishes and wines introducing you to new flavours. Every dietary requirement and craving are satisfied, and we will tempt your taste buds with our tapas style lunches and venison tastings. We have a fully certified Kosher kitchen and full supervision by a Mashgiach can be arranged at additional cost.
Our Chalkley and Kingston Treehouses set you in the middle of big landscapes, globed by even bigger skies, their lights twinkling down to the horizon. Below, the stillness is punctuated by animals’ whistles, huffs, and growls… carried on the wind.
