Corte Alta is a cosy-split level room with a king size bed on a mezzanine one floor up, which allows for a beautiful view of the courtyard. The bathroom is on the first level and has a walk in shower. This is a smaller room ideal for younger adults and beds can be twinned.
Corte del Pellicano – 40 sq.m. / 431 sq.ft.
This Deluxe Suite opens onto the courtyard and features a bathroom encased in the original vaulted ceiling. The king-size bed, which can be twinned, is dressed with the finest Italian bed linen, handmade in Puglia as well as traditionally hand-woven bedspreads. Custom made walnut furniture created by artisan hands, and complemented by Italian designer pieces as well as a sculptural iron console. Ensuite bathroom under a rediscovered vault, with monsoon shower and fine organic olive-oil based toiletries made in Puglia, sits behind the bed. Corte Pellicano and Corte Sole are connected through a small corridor.

A lovely suite under the star vaulted ceilings of “pietra leccese” encased within the castle walls, which opens onto a charming patio. The Suite of the Rose is a stunning large area on the ground floor encased within the older walls of the castle, featuring soaring vaulted ceilings, separate living room, bedroom and two bathrooms. The king size bed is dressed with the finest Italian bed linen made in Puglia, and traditional hand-woven bedspreads. Custom-made walnut furniture created by artisans is complemented by designer pieces and antiques.
Master Suite Alcova di Diana – 58 sq.m. / 624 sq.ft. + 45 sq.m./ 484 sq.ft terrace
On the Piano Nobile, this elegant first floor Suite under soaring vaulted ceilings, looks out over the cobbled courtyard from the balcony. Featuring a beautifully decorated bedroom with the original 18th century alcove which frames the king size bed. Ensuite bathroom with monsoon shower, living room and its own private terrace overlooking Ugento’s rooftops.

Under the leadership of our Executive Chefs, a unique Italian cookery school has been created beneath the vaulted ceilings of the castle’s old storehouses focusing both on Puglia and all Italian eno-gastronomy.
Food enthusiasts can reserve cookery classes at the Puglia Culinary Centre, mastering local recipes and visiting nearby markets to source the freshest seasonal ingredients every day. Our team of chefs, will happily share their passion while local ‘nonnas’ come in at times to demonstrate the recipes passed down to them over generations. Hotel and visiting guests are welcome for group lessons, for amateurs and experts alike.
The castle’s restored 18th-century kitchen garden is a wonderful source of fruits, vegetables and herbs including organically grown lemon, orange, persimmon, fig and almond trees laden with fruit, while raised beds are planted with fennel, basil, and fava beans during spring. In summer the crops include peppers, prunes and peaches, in autumn there are cauliflowers, pomegranates and persimmons to pick while in winter melons, tangerines, artichokes and cabbages are in season.

Il Tempo Nuovo
Il Tempo Nuovo, is where your culinary experience will begin in Ugento. Here we celebrate local, seasonal cuisine, as Chef Tommaso Sanguedolce re-imagines Puglia’s traditional dishes for the 21st century, dissecting recipes passed down through families over the centuries and conjuring gastronomic creations from the simplest ingredients.
His philosophy is to focus on flavour, shining the spotlight on each season’s natural produce and capturing its essence with his trademark elegance and lightness of touch. Chef Tommaso prepares a Menu del Giorno, based on his market visits and the seasonality of local produce.
