Bizcochos are the best biscuits of Ecuador! On the way travelling north of Quito you pass by Cayambe town where these bizcochos are made. They are buttery flaky biscuits having its origin in Spain and they were introduced to the continent when the Spanish settled in the 1500´s. This very popular snack and specialty of the inhabitants of Cayambe is typically prepared in wood fired ovens. In Cayambe there are many restaurants baking bizcochos all day long - one single restaurant makes about 1500 of these biscuits per day!

As part of the tradition, the Ecuadorians like to have their bizcochos together with ¨queso de hoja¨, leave-wrapped fresh cheese. For a sweet snack, they also like to combine it with ¨dulce de leche¨ (caramel sauce) to spread it on top. Enjoy a nice cup of coffee with it!
